Dorothy Chen-Maynard is the director of the Nutrition and Food Sciences Program, which is a Didactic Program in Dietetics (DPD) approved by the Commission on Accreditation of Dietetic Education (CADE) or the American Dietetic Association (ADA). She oversees the curriculum and maintenance status of the DPD program at CSUSB, which requires a self-study and renewal every 10 years with a status report every 5 years. She is very active in the dietetic association at the state and local levels, especially in the areas related to education policies and scholarship funds for dietetic students.
Dr. Chen-Maynard was born in Rangoon, Myanmar (formerly known as Burma) and lived in Taiwan for a year before her family migrated to Los Angeles, California. She received her Bachelor of Sciences degree with undergraduate studies in Biological Sciences, where she became interested in nutrition and metabolism. She received a MS degree in Nutrition and Food Science from California State University, Los Angeles. She completed her “internship” program at the University Affiliated Program of Children’s Hospital of Los Angeles, specializing in providing assessment and intervention for people with developmentally disabilities. In addition to working for the regional center for developmentally disabled, she taught part time at local CSU campuses. Since she enjoyed teaching at the CSU system, she decided to pursue a doctorate degree in Nutritional Sciences at UC Davis. Her dissertation was on effects of labor and delivery on lactation performance. She started her teaching career at CSUSB in the Fall of 1992.
